Crispy Smashed Mediterranean Pitas
The weeknight meal that cured my dinner boredom... and doubles as meal prep 🥙
The Inspo: You might be surprised to know that boredom and food is one of the things I struggle with the most. It’s so easy for me to get bored with the same things over and over again (if you’re a fan of our Bai’s Bowls meal prep series, you already know this 🤪 ). With that said, I am always bargaining with that voice, while also wanting something thats familiar and easy to make on a weeknight. I was majorly craving Mediterranean food last week, but didn’t have it in me to make kebabs (IYKYK), and wanted something that could even make a lazy meal prep. And since I have been seeing the smashed taco trend everywhere, I decided to take this to a Mediterranean pita wrap and it did not disappoint.
The Hero Ingredient: The focus ingredient today is tofu! I know some people still view tofu as a boring health food, but when it’s crumbled, smashed, and paired with chickpeas, it becomes an absolute culinary staple. Tofu is a total powerhouse for women’s health. It’s a complete plant-based protein, meaning it delivers all nine essential amino acids to keep your lean muscle mass fueled and your blood sugar stable… preventing those not-so-fun energy crashes. Bai’s Tip: This recipe is a total mini meal prep for busy weeks! Do yourself a huge favor and meal prep the seasoned tofu-chickpea mixture and that tahini-mustard dressing ahead of time.
