Everyone always asks me, “what do I eat when I’m done cheffing for everyone else?” The answer is usually something thats high protein, and takes less than 15 minutes to make. And since last week I posted about my homemade chili crunch with lots of questions of how to use it…. it’s time I introduce you to this Glass Noodle and Dumpling bowl that I can’t get enough of.

It’s a vibrant blend of fresh spring veggies, protein-rich edamame, and crave worthy tofu dumplings, all tossed together in a savory sauce that’s sure to put this recipe on the top of your weeknight dinner roster. It’s a must to pair it with my homemade guajillo chili crunch, which brings just the right amount of depth to the dish, but if you grab a store-bought version - thats ok too 😉 .

What’s fantastic about this recipe is its speed—it comes together in under 20 minutes, making it an ideal choice for those busy weeknights when you still want something wholesome and comforting. Bai’ Tip: To find gluten free sweet potato glass noodles, you can order online or try your local asian market where you will find tons of noodles to choose from.
