With edamame as the star ingredient, this creamy spread is packed with protein and fiber, making it a smart choice for fueling your morning. The soy bean based spread comes together in just a few minutes with the help of a blender, and the flavors garlic, tahini, lemon are bright, fresh, and totally crave worthy, especially in the summer months. I personally love this one because it’s easy to make for meal prep, and it’s so nourishing + quick to make for after a work out. Even without the toast, the edamame spread works so well for buddha bowls!
I love to whip up a batch of the edamame hummus early in the week and store it in the fridge for grab-and-go breakfasts or quick lunches. When you're short on time, all you need to do is toast a slice of sourdough and top it with a generous dollop of the spread, a little lemon zest, sea salt, and a drizzle of olive oil. It's a no fuss, no compromise kind of meal….all completely vegan, delicious, and totally summer-friendly!
The best part? Each piece of toast has about 15g of protein per serving when served on sourdough!
