Instant Miso Ramen Jars

When being lazy is the only answer 🍜

The Inspo: When I’m feeling off, my go to meal is a simple and hot miso soup. My main motivation is protein paired with that feel good you only get from a miso soup. Unfortunately this usually coincides with when I’m also feeling lazy…usually around my luteal phase. This recipe embodies the miso soup vibes, but with noodles and some extra ingredients to give it a ramen feeling. I love to prep these a few days before my luteal so that when it hits, all I have to do is add hot water and enjoy. There is nothing better than having a warm, comforting soup ready to go when your energy is totally zapped. Your lazy self will thank you later!

The Hero Ingredient: The hero ingredient is edamame today. I love adding these because they are an incredibly easy way to sneak in some extra plant based protein and fiber. Edamame is packed with essential vitamins and minerals like iron, folate, and magnesium which are amazing for supporting your body and keeping your energy up throughout the day. I always keep a bag or two of frozen edamame on hand just in case I need a quick protein boost in a dish.

Bai’s Tip: I have two tips today. First, when you are breaking the uncooked maifun noodles, it will be slightly messy, so it’s best to do it over a large bowl to catch any loose pieces of noodles. Otherwise, you'll be finding tiny noodle pieces all over your kitchen floor for the next week (speaking from experience).

Secondly, make sure to let the jars sit on the counter for 15–20 minutes to take the chill off before adding your hot water. If you pour boiling water straight into a cold glass jar fresh out of the fridge, the drastic temperature change can actually crack the glass (also speaking from experience 😜). Letting it come to room temperature first keeps you and your ramen jar safe.
