Mint Chip Smoothie
Blend, sip, glow!
I don’t know who needs to hear this, but your breakfast deserves to feel like a little act of self-care. Not a rushed granola bar in the car. Not three cold sips of yesterday’s coffee (this is Steve’s red flag 🙃). Something green, minty, chocolatey, and honestly... so good it could pass as dessert.
This smoothie tastes like mint chip ice cream met a green goddess and they went to therapy together. It’s got spinach, zucchini (don’t knock it), seeds for your brain, and protein to keep you grounded. The chocolate chips? They’re your reward for just existing.
If you’ve been craving a breakfast that feels good but also feels fun, this one’s your sign. Go ahead, blend it up, pour it into a pretty glass, and call it your morning ritual.

Serves 2
The Goods:
2 tbsp hemp seeds
1 tbsp chia seeds
1 tbsp flax seeds
2 cups spinach
1 frozen banana, peeled
2 cups frozen cubed pineapple
1/4 cup mint leaves,
1 small zucchini, sliced
4 scoops vanilla vegan protein powder (we love K’achava!)
1 1/2 cups unsweetened soy milk
2 cups ice cubes (optional)
1/4 cup vegan chocolate chips
mint sprig garnish (optional)
The Method:
Grab a high powered blender, and add all the ingredients into it except the chocolate chips and ice cubes. Blend on high for 1-2 minutes or until fully smooth.
If you want it colder, add ice cubes and blend for 60 seconds on high.
Now add the chocolate chips and pulse about 9-10 times to slightly blend the chips into smaller chocolate chunks.
Pour into your serving glasses, and garnish with a mint sprig and enjoy immediately while its nice and cold.
Store any leftovers in an airtight container in the fridge, and consume within 24 hours
