This is truly one of the simple joys in life. Food has a way of transferring us back to simpler times, and something like scrambled eggs can do just that. I have made a tofu scramble hundreds of times, and I wanted to play around with a soy-free version of this not only for those of you who are soy-free out there, but also for those times I don’t have tofu on hand and need to stick to my dry pantry.

Pumpkin seeds are incredibly high in nutrients like protein, magnesium, iron and fiber making them the perfect replacement to help support our bodies.

This recipe comes together so easy, the hardest part is waiting for the pumpkin seeds to soak! All you do is soak the seeds, rinse well, add to a blender with water + spices and blend well. Once the seeds are blended you cook them on a non-toxic non stick pan like you would normal eggs and boom! You’ve got scrambled eggs that are allergy friendly and protein packed!

You can also meal prep the batter at the beginning of the week so the “eggs” are ready when you are!
