With egg prices skyrocketing right now, it’s the perfect time to dive into the world of plant-based substitutes! Swapping out eggs for healthier options not only saves you some cash but also introduces a whole new range of delicious flavors. Plus, it’s always a smart idea to have a variety of ingredients on hand—after all, you never know when a shortage might hit. This goes for anything, not just eggs. Love almonds? Why not experiment with oats or cashews. If rice is your go-to, try switching things up with quinoa or millet.

You could even take the next step and go make your favorite substitutes at home. If you have a specific coffee creamer you love, maybe try to recreate it in the kitchen or try something entirely new. I even made the transition easier with my new cookbook “Breaking Up With Dairy” which has a pistachio milk, a black sesame seed milk, a blood orange milk, a horchata creamer, a amaretto creamer, and even a hazelnut spread that doubles as a coffee creamer! Instead of relying on the brands, the stores, and the supply chains, you can learn to make your own favorites for usually a fraction of the cost from the items in your pantry. Plus, keeping your kitchen diverse not only sharpens your cooking skills but also leads to tasty surprises you might’ve never discovered otherwise.

And now circling back to the egg problem. If you are someone that loves eggs and can’t seem to live without them, well I have some good news for you. I’m simplifying your life and making this switch easier for you by providing you three easy recipes that you can make at home. Better for your health (zero cholesterol), better for the animals (🐣), and better for the planet. (🌅)

If you ever needed a sign to learn to pivot in the kitchen, here's three!
